Kitchen Sink Concoctions Pt. 1: Turkey Alfredo with Garlic Green Beans

So we just got back from my first trip ever to NYC–working on that blog post for an “Un-touristy NYC Trip” so in the meantime I wanted to start my segment on my “kitchen sink” recipes after some requests.  It’s almost Thanksgiving and everyone’s wrapping up work deadlines, prepping for Thanksgiving, mentally preparing for Black Friday shopping and planning outfits for holidays parties. TRUST ME when I say that I know a lot goes on this time of the year. My calendar is booked. SO if you’re anything like me, you want to try and look your best for family/friend visits and photos of course. So this year we’re going out of town to visit Tony’s family in Kentucky and I’m trying, *repeat* trying to eat healthy before the indulgence truly begins and I’m trying to get stuff out of the fridge!

Here’s what I had to work with for dinner before we left on our trip:

  1. Frozen organic green beans–GIANT Costco bag
  2. Ground turkey meat
  3. Minced Garlic
  4. Block of Parmigiano Reggiano cheese
  5. Box of gluten free Alfredo risotto Lundberg Family Farms brand

This “kitchen sink” reference if you’re not familiar, is an Idiom which contextually translates the last of every item–this  case being every last thing in the fridge.

Now that we’ve cleared that up–here’s how to make it!

Step 1: Saute the green beans and garlic–I used olive oil. Cook for around 8 minutes then add cheese.

Step 2: Coat nonstick pan with olive oil or coconut oil. Cook ground turkey until brown.

Step 3: In separate pan cook risotto mix:

  1. In a heavy 2 qt. saucepan saute rice in 1/2 tbsp, olive oil over medium heat for 2 minutes.
  2. Add 2 cups water, 1/2 cup milk (I used almond milk), and seasoning pouch. Stir well and bring to a boil.
  3. Reduce heat to simmer, cook uncovered for 20 minutes, stirring occasionally, until rice is tender. Serve warm and garnish with Parmesan cheese if you wish!

Finally, combine the ground turkey and risotto paired with green beans and ENJOY 🙂

Quick, easy and delicious.
